Mesquite Flour Pinole Recipe

This is a traditional Native-American recipe using mesquite flour or meal. Some traditional recipes can be considered bland and are unfamiliar in taste by today's standards, but this is a way to get to know and experiment with this beneficial superfood for diabetes.

There are different types of pinole, often made with ground corn. One thing the different types have in common is that they were used as convenient, quick sources of energy and nutrition. Long-distance runners used to use pinole as their sole source of nutrition. They carried the powder in a pouch and would eat it as-is or mix it with water. Ingredients:

  • 1 cup water or milk
  • 1 tbsp mesquite flour
  • 1 tbsp roasted wheat flour (optional for enhanced flavor and nutrition)

Preparation:

Add the flour to the cup of water or milk and stir.
