Are starchy vegetables good or bad?
As a person with diabetes, I often get told to avoid starchy vegetables. That has confused me because although they are higher in carbs than other vegetables, they are still full of good stuff like vitamins, minerals, antioxidants.
The answer is that they are nutritious foods but we have to limit how much we eat of them.
