Chorizo is a favorite food of mine that I crave, but should not have often. When I want a healthier version of traditional chorizo, I make this vegetarian chorizo recipe to help cut down on my animal protein and fat.
Chorizo, Tex-Mex style, is made from ground beef or pork or a mixture of the two. It contains spices such as oregano, salt, garlic, chili powder and vinegar. This spicy mix is sometimes scrambled with eggs or fried and eaten on the side. Sometimes it is added to other dishes such as tacos or burritos.
I do not cook this recipe and I use it as a topping on salads, spread it on a cracker or use it in a wrap with nori seaweed, lettuce, or a small tortilla.
Ingredients:
- 1 cup walnuts
- 1 clove garlic smashed or finely minced
- 2 tablespoons of your favorite chili powder
- 1/2 teaspoon salt
- 2 tablespoons apple cider vinegar (less if you find the vinegar flavor too strong)
Preparation:
Put the walnuts into a sturdy plastic freezer bag (do not seal it) and carefully mash the walnuts with a rolling pin until it is to the desired consistency. You can mash it to a crumbly consistency or keep mashing to make it smoother.
Put the walnuts into a bowl, add the rest of the ingredients, and mix well.
Use on a salad, on crackers, or in a lettuce or tortilla wrap. You can also roll the mixture into little "meatballs" and eat them plain as a snack. Perhaps you can find another way to enjoy. If so, please share.
