Ever wish there was a slightly oily, crispy, crunchy, little-bit-salty snack that was low in calories and good for you? I have many times, and I remember laughing at myself over it. With modern discoveries life is certainly a lot different today than when I was a high school teen fretting over calories and stocking up on rice cakes. Today we get to enjoy this wonderful baked kale chips recipe.
Kale is a nutritional powerhouse that has many qualities helpful to people with type 2 diabetes. It helps ward off cancer, high cholesterol, and heart disease among many other benefits.
Kale chips can be made in a dehydrator, oven, or even a toaster oven. This is a basic recipe for oven baked kale chips. After you have this recipe down, experiment with variations using different ingredients such as Parmesan cheese or lemon zest to coat the chips and add flavor.

Ingredients:
- A small bunch of kale or half of a large bunch
- A dash of Olive oil
- A pinch of Salt
Preparation:
Preheat your oven to 350 degrees.
Use enough kale to fill the shallow baking sheet or sheets you plan to use. For one regular baking sheet, I usually use half of a good-sized bunch of kale or one small bunch. This recipe isn't an exact science.
Wash the kale and allow it to dry thoroughly. Remove the hard stems and tear the leaves into small "chip-size" pieces. Drizzle a small amount of olive oil over the kale. Start with about 2 tsp. Sprinkle a pinch of salt to taste. Both the oil and salt will go a long way so avoid using too much. It is better to use too little and add more if you need. Feel free to taste test as you go.
Toss the kale, oil, and salt. Use your fingers to gently coat the kale pieces, making sure it is well coated.
Spread the kale on the baking sheet. Lay the kale flat in a single layer.
Put the kale into the preheated oven and cook for 8-12 minutes. Begin checking around 8 minutes and watch the chips to make sure they don't burn. When they are done, quickly remove the baking sheet and remove the chips from the cooking surface and into a bowl or plate.
