Definition: Exchanges are foods that are grouped together into categories or lists, according to similarities in nutritional values. For example; meats, starches, dairy, and fruit. There are eight categories in all. Measured portions of foods within the categories may be exchanged or traded when planning your meals. A single exchange contains approximately equal amounts of carbs, protein, fat and calories.
