A Zesty Summer Side-Dish of Grilled Zucchini

Grilled zucchini is a crowd pleaser. Some squash can be a little stringy or chewy, but zucchini has an easy crunch when cooked just right on the grill. As a gardener, I'm also always looking for ways to use zucchini because zucchini plants often produce a bounty! This quick recipe can be served up with grilled chicken, fish or steak to complete a meal. One serving provides 60 calories, 3.5 grams of fat, 7 grams carbohydrate, 2 grams fiber, and 3 grams protein.

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 4 small zucchini - stem removed and then sliced in half lengthwise
  • 1 Tablespoon olive oil
  • 2 Tablespoons fresh chopped herbs
  • 1 Tablespoon minced garlic
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Preparation:

  1. Wash zucchini and pat dry.  Slice off stem and base, then slice in half lengthwise.
  2. Mix olive oil, herbs, garlic, salt and pepper together in a small bowl. 
  3. Brush the inside zucchini halves with oil mixture.
  4. Place zucchini cut-side down on grill over moderate heat. 
  5. Grill 8-10 minutes or until zucchini is still crunchy but also tender throughout - a fork should pierce the skin easily. 
  6. Serve immediately
