This sweet potato pancake recipe does not have added fat or sugar, making it a great option for anyone looking to limit calories and sugar. I like to top them with Greek yogurt and berries. This recipe makes about 12 pancakes, with each pancake providing 45 calories, 0.5 grams of fat, 9 grams of carbohydrate, 1 gram of fiber, and 2 grams of protein.

Ingredients:

  • 3/4 cup mashed cooked sweet potato
  • 3/4 cup whole wheat flour
  • 3/4 cup almond milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 1 egg

Preparation:

  1. Warm a skillet over medium heat.
  2. In a large bowl, mix together sweet potato, almond milk and egg. In a second bowl, mix flour, baking powder, salt and nutmeg.
  3. Add dry ingredients to wet ingredients in 3 parts and stir until incorporated.
  4. Spray warm skillet with nonstick cooking spray.
  5. Using a 1/4 cup measure, scoop pancake mixture onto skillet in rounds. Cook until edges start to look dry and bubbles start to pop - flip and cook for about 1 minute longer.
  6. Top with Greek Yogurt and Berries, or your favorite topping.
