Onion, Tomatoes and Grilled Squash

Grilled squash mixed with onion and tomatoes is a sweet and savory side-dish to serve up alongside grilled chicken, fish or beef. Yellow squash is used in this recipe, but zucchini can be used as well. One serving provides 60 calories, 3 grams fat, 8 grams carbohydrate, 2 grams fiber and 2 grams protein.

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

  • 3 medium yellow squash
  • 1 red onion
  • 1 cup grape tomatoes
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • 2 Tbsp fresh chopped basil
  • 1/4 tsp salt

Preparation:

  1. Rinse squash and pat dry. Cut off stem and base. Cut lengthwise, and then crosswise into 1/2 inch half-moons.
  2. Peel onion and remove base. Cut into 1/2 inch circles and then slice in half.
  3. In a large bowl, mix vinegar, olive oil, garlic, basil and salt.
  4. Toss in yellow squash and onion and stir to coat.
  5. If you have a grill pan, spray it with nonstick cooking spray and then transfer vegetables to grill pan. If you don't, spray aluminum foil with non-stick cooking spray and wrap vegetables in it -- vent the pouch once on the grill with a knife.
  6. Grill for 5-6 minutes or until vegetable start to turn a bit brown. Then add tomatoes and cook another 1-2 minutes.
  7. Remove vegetables from grill and transfer to serving platter. Pour remaining marinade over vegetables and serve.
