Grilled squash mixed with onion and tomatoes is a sweet and savory side-dish to serve up alongside grilled chicken, fish or beef. Yellow squash is used in this recipe, but zucchini can be used as well. One serving provides 60 calories, 3 grams fat, 8 grams carbohydrate, 2 grams fiber and 2 grams protein.

Ingredients:
- 3 medium yellow squash
- 1 red onion
- 1 cup grape tomatoes
- 2 Tbsp balsamic vinegar
- 1 Tbsp olive oil
- 1 clove garlic, minced
- 2 Tbsp fresh chopped basil
- 1/4 tsp salt
Preparation:
- Rinse squash and pat dry. Cut off stem and base. Cut lengthwise, and then crosswise into 1/2 inch half-moons.
- Peel onion and remove base. Cut into 1/2 inch circles and then slice in half.
- In a large bowl, mix vinegar, olive oil, garlic, basil and salt.
- Toss in yellow squash and onion and stir to coat.
- If you have a grill pan, spray it with nonstick cooking spray and then transfer vegetables to grill pan. If you don't, spray aluminum foil with non-stick cooking spray and wrap vegetables in it -- vent the pouch once on the grill with a knife.
- Grill for 5-6 minutes or until vegetable start to turn a bit brown. Then add tomatoes and cook another 1-2 minutes.
- Remove vegetables from grill and transfer to serving platter. Pour remaining marinade over vegetables and serve.
