Healthy Baked Sweet Potato Recipes for Any Time of Year

Baked sweet potato recipes are traditionally served around the holidays, but this lighter version pairs nicely with meals throughout the year. I often purchase a rotisserie chicken for a quick Sunday dinner and serve this sweet potato dish on the side, but I also use this as a side dish when we barbecue. This recipe makes four servings -- each providing 110 calories, 5 grams fat (0 grams saturated fat), 16 grams carbohydrate, 3 grams fiber, and 2 grams protein.

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Yield: 4 servings

Ingredients:

  • 2 sweet potatoes, peeled and thinly sliced
  • 1/2 cup orange juice
  • ground cinnamon
  • 1/4 cup chopped walnuts

Preparation:

  1. Preheat oven to 350.
  2. Spray a square baking pan with non-stick cooking spray.
  3. Layer sweet potato slices with orange juice poured over every layer, lightly sprinkling with cinnamon between layers.
  4. Top with chopped walnuts and bake for 30 to 35 minutes or until potatoes are fork-tender.
