Baked Sweet Potato Hash

Last night at 5pm I was well into my dinner preparation when I realized I had forgotten to put my sweet potatoes in the oven. Knowing I wouldn't have enough time to bake them whole, I decided to shred them and make a baked sweet potato hash. It came out so well, I had to share. It makes 4 servings; each has 150 calories, 7 grams of fat (1 gram saturated fat), 20 grams carbohydrate, 3 grams fiber, and 2 grams protein. It's possible you could lighten the recipe up even more by replacing some or all of the olive oil with fat-free cooking spray, but I opted for olive oil to incorporate healthy fats.

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Ingredients:

  • 3 sweet potatoes, rinsed and peeled
  • 2 Tablespoons olive oil
  • Salt & Pepper to Taste

Preparation:

  • Pre-heat oven to 400 degrees
  • Pour 2 Tablespoons of olive oil on a baking sheet and spread around until sheet is coated
  • Grate sweet potatoes with a hand-held grater or food processor and place them on the baking sheet
  • Sprinkle with salt and pepper
  • Bake about 15 minutes, then turn with a spatula. Bake another 10-15 minutes or until they begin to get a little crisper.
  • Serve immediately as a healthy side-dish
