Creamy and naturally sweet, this avocado and mango salsa recipe goes nicely on top of baked fish or spicy grilled chicken -- and is a great complement to a diabetic meal plan. Ingredients:

  • 1 Mango - diced
  • 1 Avocado - de-pitted and diced
  • 1/2 Red Bell Pepper - diced
  • 1/2 Small Red Onion - diced
  • 2 Tablespoons Lime Juice

Preparation:

Toss mango, pepper and onion. Add diced avocado, pour lime juice over top, and then lightly mix. Serve immediately.
