Healthy & Tangy Orange Broccoli Recipe

If you thought you'd never like broccoli unless it was smothered with cheese, you should try this broccoli recipe. Orange and garlic lend the necessary sweet and tangy flavor that will elevate this side dish to one of your favorites. It's a perfect addition to any healthy meal plan. Each 1-cup serving provides 90 calories, 14 grams carbohydrate, 5 grams of protein and 3 grams of fat.

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: 4 - 1 cup servings

Ingredients:

  • 2 oranges
  • 8 cups broccoli florets (about 2 large heads)
  • 1 tablespoon margarine
  • 2 cloves garlic - minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Preparation:

  1. Zest one orange and juice both oranges. Set zest and juice aside.
  2. Steam broccoli for about 10 minutes or until crisp-tender.
  3. Melt margarine in a small skillet over medium heat. Add garlic, and cook 1 minute. Add orange zest, juice, salt, and pepper, and bring to a boil. Reduce heat and simmer, uncovered, for 2 minutes.
  4. Pour orange sauce over broccoli. Toss well and serve.
