Grilled Skewers with Peaches, Peppers and Sirloin Recipe

This sirloin recipe becomes a well-balanced meal by skewering fruit, vegetables and meat together. Great for diabetics, each 2-kabob serving provides 210 calories, 11 grams carbohydrate, 25 grams protein, and 7 grams fat.

Cook Time: 6 minutes

Total Time: 21 minutes

Yield: 8 - 2 kabob servings

Ingredients:

  • Kabobs:
  • 1 tablespoon ground cumin
  • 1 tablespoon cracked black pepper
  • 1 teaspoon salt
  • 2 pounds boneless sirloin steak, cut into 48 (1-inch) pieces
  • 4 peaches, depitted and cut into 8 wedges
  • 2 small red onions, cut into 8 wedges
  • 2 large red bell peppers, cut into 8 pieces
  • Cooking spray
  • Sauce:
  • 1/2 cup chopped fresh parsley
  • 1/4 cup red wine vinegar
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 garlic cloves

Preparation:

  1. Heat grill.
  2. Combine kabob ingredients in a bowl and toss well.
  3. Thread steak, peaches, peppers and onions onto 16 (12-inch) skewers.
  4. Place kabobs on grill rack coated with cooking spray.
  5. Grill 6 minutes or until tender, turning occasionally.
  6. Place kabobs on a platter and let stand 5 minutes before serving.
  7. Prepare sauce by whisking sauce ingredients in a bowl. Spoon over kabobs.
