Ingredients:
- Kabobs:
- 1 tablespoon ground cumin
- 1 tablespoon cracked black pepper
- 1 teaspoon salt
- 2 pounds boneless sirloin steak, cut into 48 (1-inch) pieces
- 4 peaches, depitted and cut into 8 wedges
- 2 small red onions, cut into 8 wedges
- 2 large red bell peppers, cut into 8 pieces
- Cooking spray
- Sauce:
- 1/2 cup chopped fresh parsley
- 1/4 cup red wine vinegar
- 1 teaspoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 garlic cloves
Preparation:
- Heat grill.
- Combine kabob ingredients in a bowl and toss well.
- Thread steak, peaches, peppers and onions onto 16 (12-inch) skewers.
- Place kabobs on grill rack coated with cooking spray.
- Grill 6 minutes or until tender, turning occasionally.
- Place kabobs on a platter and let stand 5 minutes before serving.
- Prepare sauce by whisking sauce ingredients in a bowl. Spoon over kabobs.
