Ingredients:
- 1 small cucumber - peeled and deseeded
- 1/2 medium green bell pepper - seeds removed
- 2 scallions - chopped
- 1 clove garlic - minced
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- Juice & zest from one lime
- 4 cups chopped tomato
- 1 cup low-sodium tomato juice
- 1/4 teaspoon black pepper
- dash of hot sauce
Preparation:
- Blend cucumber and bell pepper in a food processor.
- Add the rest of the ingredients and blend until smooth or desired consistency.
- Chill for at least 2 hours before serving.
- Serve cold.
