Healthy Summer Gazpacho Recipe

This is a quick, no-cook gazpacho recipe to help round out your summer meals. Perfect for diabetics, each one-cup serving provides only 100 calories, 15 grams carbohydrate, 3 grams fiber, 3 grams protein, and 3 grams fat.

Total Time: 15 minutes

Ingredients:

  • 1 small cucumber - peeled and deseeded
  • 1/2 medium green bell pepper - seeds removed
  • 2 scallions - chopped
  • 1 clove garlic - minced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • Juice & zest from one lime
  • 4 cups chopped tomato
  • 1 cup low-sodium tomato juice
  • 1/4 teaspoon black pepper
  • dash of hot sauce

Preparation:

  1. Blend cucumber and bell pepper in a food processor.
  2. Add the rest of the ingredients and blend until smooth or desired consistency.
  3. Chill for at least 2 hours before serving.
  4. Serve cold.
