Cola-Marinated Flank Steak Recipe

This unique flank steak recipe will have people asking what your secret ingredient is. Cola helps to tenderize the beef and reduce the salt content of the marinade. Since most of the marinade is not consumed, the sugar content of the cola does not significantly contribute to the nutrient breakdown, making this is a good recipe for diabetics.

Each serving provides 235 calories, 13 grams of carbohydrate, 25 grams of protein and 8 grams of fat. Balance the meal out with some low-fat steamed or grilled vegetables.

Ingredients:

  • 2 pounds beef flank steak
  • 1 cup teriyaki sauce
  • 1 cup cola
  • 1 onion - diced
  • 1 clove garlic - chopped
  • 2 tablespoons red wine vinegar
  • 1 tablespoon vegetable oil
  • 2 tablespoons hot sauce

Preparation:

  1. Lightly score both sides of steak in a criss-cross pattern.
  2. Whisk teriyaki sauce, cola, onion, garlic, vinegar, oil and hot sauce in a bowl.
  3. Reserve 1/2 cup of marinade.
  4. Place steak and the rest of marinade in a zip-lock bag and refrigerate for 2 hours.
  5. Let steak rest at room temperature for 15 minutes before grilling.
  6. Grill for about 6 minutes on each side, or until it reaches your desired doneness. Use the reserved marinade to baste steak on the grill.
  7. Let steak rest for 10 minutes before cutting, then slice into thin slices and serve.
